Mini Cheesecakes

My kids loves cheesecakes, all varieties of cheesecakes from American to Japanese cheesecakes. They have been telling me to make cheesecakes for so long.

Anak saya sangat menyukai Cheesecakes, semua jenis cheesecakes mulai dari American ataupun Japanese, mereka sudah lama sekali menyuruh saya untuk membuatkan cheesecakes untuk mereka.

So this time i decided to bake cheesecakes. However this time i took this Mini Cheesecakes recipe from The Comfort Cooking’s blog.

Dan akhirnya saya memutuskan kalau resep saya berikutnya adalah cheesecakes. Tapi kali ini saya memilih resep Mini Cheesecakes dari blognya The Comfort Of Cooking.

What a coincidence that i have the tin for mini cheesecakes, and the bottom part can be removed so that it is easier to remove cheesecakes from the tin.

Kebetulan saya mempunyai cetakan mini cheesecakes yang bisa dilepas bagian bawahnya sehingga memudahkan mengeluarkan cheesecakes dari cetakan.

MINI CHEESECAKES

INGREDIENTS :

  • 12 digestive biscuits
    • 12 buah biskuit gandum
  • 3 tablespoons melted butter
    • 3 sdm mentega cair
  • 2 (8 ounce) packages cream cheese, softened
    • 454 gr cream cheese, suhu ruangan
  • 2 large eggs
    • 2 buah telur
  • 2 tablespoons fresh lemon juice
    • 2 sdm sari lemon segar
  • 2/3 cup granulated sugar
    • 142 gr gula
  • Fresh berries, such as strawberries, raspberries, blueberries, etc (for topping)
    • Buah berry segar seperti strawberry, raspberry, blueberry dll ( sebagai hiasan )

DIRECTIONS :

  • Preheat oven to 180°C.
    • Panasakan oven dengan suhu 180°C.
  • Line muffin tins with 12 paper baking cups, or leave mini cheesecake pan unlined.
    • Alas cetakan dengan kertas cupcakes atau biarkan begitu saja tanpa alas.

  • In a food processor, pulse digestive cookies with melted butter until you’ve achieved wet sand consistency. Place 1 tbsp of cookies mixture into each cup, gently patting into the bottom and sides of each cup.
    • Dengan menggunakan food prosesor, giling kukis dengan mentega cair sampai anda mendapatkan tekstur seperti pasir. Ambil 1 sendok makan campuran kukis dan tuang kedalam cetakan, dengan lembut ratakan kebawah dan sisi dinding masing2 cup nya.
  • In a large mixing bowl, beat cream cheese until fluffy. Mix in eggs one at a time. Add lemon juice and sugar. Beat until smooth and thoroughly combined.
    • Dalam sebuah mangkuk besar, kocok cream cheese sampai lembut. Campur telur satu per satu. Tambahkan lemon juice dan gula. Kocok lagi sampai lembut dan rata.

  • Fill each baking cup 2/3 full with cream cheese mixture.
    • Tuang adonan kedalam cetakan sampai terisi 2/3 nya.

  • Bake in preheated oven for 15 minutes. Cool pan completely on a rack before removing cheesecakes.
    • Panggang dalam oven selama 15 menit. Dinginkan kue dalam cetakan sampai siap dipindahkan.
  • Top with fresh berries, fruit pie filling, chopped nuts, or fresh whipped cream before serving, if desired.
    • Hias dengan buah berry segar, krim fruit pie, kacang2an yang dipotong kasar atau whipped krim segar jika suka.
